Chef Davy Mathis

Originally from Bantzenheim, chef Davy Mathis, owner of the Cheval Blanc restaurant in Hochstatt, is a graduate of the Ecole Hôtelière J.Storck in Guebwiller.

In the course of his professional career, Davy has built up his culinary experience in leading German, Swiss and French establishments, working with a number of prestigious brigades, including chef Philippe Rocca at the three-starred À l’Hôtel de Ville restaurant in Crissier, and chef Marc Haeberlin at the Auberge de l’Ill in Illhaeusern, also a Michelin-starred chef.

Driven by his passion for creative cuisine and the culture of excellence, Davy Mathis decided in 2004 to take over the reins of the Au Cheval Blanc restaurant in Hochstatt with his wife Muriel.
