Treasures in the cellar
A former sommelier in the world of haute gastronomy, Maxime Paon runs his own wine cellar, fashioned to his own taste. As of 2019, Hopla Vins presents a selection of around 450 wine references, preferably organic, biodynamic or natural, exclusively craft and Alsatian beers, as well as a wide range of spirits (gins, rums, whiskies, regional eaux-de-vie).
A finalist in last year’s Meilleur caviste de France competition, the expert shares one of his latest favorites with us: the Côtes du Rhône Rouge “Loï” 2020, Domaine Saladin, an organic blend of Grenache, Syrah and Carignan, powerful and juicy, with spicy, peppery notes.
