Reinstalled in the new MGallery hotel in Colmar, on the Champ de Mars, the JY’S restaurant offers a 200 m2 room for 10 tables and a large kitchen of 180 m2, where a fusion cuisine evolves that revisits dishes with audacity and relevance.
The menu, regularly renewed, is a real invitation to discover surprising flavors that mix inspirations from here and elsewhere.

An atypical career
At the helm of his restaurant, Jean-Yves Schillinger has drawn his strength from his atypical career. Trained alongside Joël Robuchon, Gérard Boyer and Jean-Paul Bonin, the chef first worked in the family restaurant. It was run by his father, Jean Schillinger, also a Michelin-starred chef. After a 7-year stay in New York, where he set up two establishments, Destiny and Olica, and developed an ever more creative cuisine, Jean-Yves Schillinger chose to return to Colmar. His ambition? Attract with its innovative menu a cosmopolitan clientele looking for an extraordinary place. The friendly atmosphere contrasts with the requirement brought to the plate.
