A Fine-Dining Restaurant in the Former Staeffele
Tucked away just a stone’s throw from the Rohan Castle and across from the Gothic cloister of the Récollets in Saverne, Restaurant Morillon has taken over the premises of the former Staeffele, a local culinary institution. This new chapter is led by a team of four professionals who share the same vision for their craft: Laurent Marlot and Maxime Oberlé in the kitchen, and Emmanuelle and Jean-Baptiste Becker—a couple serving as maître d’hôtel and sommelier—in the dining room.
In a refreshed setting that remains true to the cozy spirit of a refined neighborhood restaurant, the establishment offers about ten tables featuring a modern take on classic cuisine—generous and bursting with flavors—showcased through a menu and a tasting menu with gourmet aspirations. The restaurant’s name pays homage to the morel mushroom, the central theme of the menu, featured in different ways depending on the season, alongside an excellent wine list covering all of France’s wine regions.
