The small café-restaurant TABULA RASA becomes ARIES, a brand new wine bar on Avenue de la République in Colmar. Here, organic and biodynamic wines from Alsace’s terroirs take pride of place, along with innovative vinifications, natural wines and fine references from the rest of France. A new page has been turned, but the chef continues to honor fresh local, organic and seasonal produce in the form of shareable dips: a 100% vegetable board, a selection of cheeses and other local products.
The decor changes to a more cosy, hushed atmosphere, dedicated to nocturnal birds, and the charming terrace lets you enjoy the cool evenings.
