The restaurant is run by chef Jean-Baptiste Natali, the youngest chef in France.
The son of a restaurateur, Natali has been passionate about cooking from an early age.
He worked in several prestigious restaurants before returning to his native region to take over the reins at Hostellerie La Montagne.
His CV is also full of wonderful encounters all over the world.
The Palme d’Or restaurant at the Hotel Martinez in Cannes, the Daniel Boulud restaurant in New York, the famous Mamounia in Marrakech, Thailand, Vietnam, China, the Sultanate of Oman and the Maldives all extend his culinary palette to the most subtle flavors.
In 2002, just one year after his return to Colombey, he was awarded his first Michelin star at the age of 27.
