Under the leadership of Michel Herrscher (2nd generation), the Herrscher family butcher’s shop has flourished since its beginnings. The “little neighborhood butcher” now supplies the Herrscher establishments, as well as the Grands Frais d’Alsace butchery and delicatessen departments, distributors and restaurateurs – some of whom are renowned for using the workshop for custom game processing.
The speciality to eat on the go is pâté en croûte: traditional or organic, or the excellent trout pâté (to order). And, of course, warm pâté, simply served with a fresh salad.
Michel deploys his know-how to open his own restaurant, where he offers a selection of products from his own production workshop. Meats are meticulously matured and charcuterie is prepared according to the original recipes of Georges Herrscher, the founder of the renowned butcher’s shop. The restaurant offers a wide range of traditional Alsatian dishes, as well as a variety of dishes from other culinary horizons.
With his catering service in Colmar, Michel Herrscher offers a daily selection of two different dishes, as well as a year-round catering menu and a range of festive products. Whether for private or business events, the entire team is at your disposal to advise and support you in the planning of your events.
