Because the ecological footprint is important in the restaurant business, Jeanne Satori and David Degoursy have imagined a microcosm as respectful as possible of the planet. Jeanne has a degree in Ecology, David studied Literature, for them every gesture counts in their restaurant of:ja, in Strasbourg. Here, no disposable unitary products, systematic use of local products with ecological labels and composting of foodstuffs at the end of the service. Likewise, the tableware, decoration and kitchen utensils have been carefully selected from local artisans.
Maintaining the strong link between man and nature
At the gastronomic restaurant de:ja, Jeanne Satori and David Degoursy distinguish themselves by their “living” cuisine. Their menus are inspired by nature and the producers by taking up 3 types of harvests used by man since the beginning of time: Picking, Harvesting, Picking. They are also interested in ancestral methods of cooking, salting and preserving, which allow us to rediscover forgotten flavors. Their innovative culinary ecosystem wants to go through time and can change from day to day, according to the pickings in the forest and the arrivals of the partners in agreement with the environment.
