La Vinaigrerie des Gourmets, located in the charming village of Gundolsheim at the foot of the Alsatian vineyards, embodies the very essence of local gastronomy and love of the land. Passionate about gastronomy and fervent supporters of our region’s products, the founders wanted to capture the typicality of Alsatian grape varieties through a range of original, authentic vinegars.

La Vinaigrerie stands out for its artisanal approach and respect for tradition. The acetification process, which transforms wine into vinegar, relies on a bacterium naturally present in the air, called mycoderma aceti. This bacterium binds oxygen to the alcohol on its surface, forming what is known as a vinegar mother. This delicate and precise process requires many months of maturation in oak barrels to produce a high-quality vinegar.

It stands out for its exclusive use of organic Alsace wines to make its vinegars. This approach preserves the typical character of Alsatian wines, made from a single grape variety, in keeping with the region’s winegrowing tradition. Alsace wines, world-renowned for their quality, benefit from an exceptional terroir and a dry, sunny climate, ideal for growing vines and producing excellent wines. As the saying goes: “For there is no doubt that good wine and time make good vinegar.

The Vinaigrerie des Gourmets range includes two main varieties:

Alsace wine vinegar is made from the region’s specific grape varieties, which means that each bottle has its own unique characteristics. This vinegar blends subtly with dishes, respecting the same pairings as Alsace food and wine, bringing a refined, flavorful touch to cuisine.

Alsamic vinegar, on the other hand, is the result of a different process. Produced from the slow cooking of grape must, it concentrates its flavors as the water evaporates, leaving only the essence of the grape, a veritable elixir. The result of patience and craftsmanship, this vinegar is a concentrate of noble matter, offering incomparable depth and aromatic richness.

Vinaigrerie des Gourmets’ philosophy is based on respect for tradition and the promotion of Alsace’s terroir. By offering vinegars made exclusively from organic Alsace wines and following traditional production methods, the vinegar factory is committed to quality and authenticity.
