Guillaume Besson, chef emeritus and now the only one at the helm, orchestrates a symphony of flavors with passion and talent, where each dish tells a story, and each bite reveals a palette of unexpected flavors. Accompanied by kitchen accomplice Claire Andreux, he combines his know-how with inspiration drawn from the four corners of the globe. Asian influences blend with local Alsatian produce in a marriage as surprising as it is delicious. Organic, seasonal and local products are meticulously selected to offer an authentic and refined culinary experience, 100% homemade.

Since its first star awarded by the Michelin Guide in January 2019, followed by three toques at Gault&Millau, Les Funambules’ reputation has continued to grow, attracting gourmets in search of unique gustatory emotions. Chef Besson’s cuisine is an ongoing journey, a never-ending exploration of new flavors and innovative techniques. The atmosphere in this temple of gastronomy is a reflection of its cuisine: both contemporary and warm. Walls adorned with black-and-white photographs of tightrope walkers recall the precarious balance between tradition and modernity, while in the center of the room sits a majestic glass table, supported by a teak wood leg, a veritable work of art. The culinary experience at Les Funambules would not be complete without the perfect wine pairing. Sommelier Camille Cullard, trained at prestigious institutions such as Auberge de l’Ill** and Alchémille*, offers an exquisite selection of mostly biodynamic and natural wines, enhancing each dish with subtlety and elegance.
