Passionate about gastronomy from a very young age, Thomas honed his skills in the kitchens of Alsatian gourmet restaurants such as L’Auberge du Cheval Blanc in Westhalten, Au Cygne in Gundershoffen, and Au Crocodile in Strasbourg. In 2015, he took command of the kitchens at Les Secrets des Grands Express. Then he obtained the title of Master Restaurateur in 2017.
In July 2019, this challenger accepted the challenge of the gourmet restaurant at Le Relais de la Poste: to restore the establishment’s nobility. Since then, he has been leading his team towards excellence, offering new culinary experiences to his customers, improving his dishes every day to achieve perfection. In March 2023, he obtained his first Michelin star. In October 2023, he joined the Etoiles d’Alsace association, a recognition in his region, which he honors in his menu.
Deeply convinced that the quality of dishes lies in the choice of ingredients, Thomas is committed to working exclusively with fresh and seasonal products, and as much as possible with local products. He also places great importance on transmission, whether with his teams on a daily basis or with the younger ones in the village, during educational outings dedicated to cooking and flavors.

Alongside Thomas Koebel, a team of 10 people works to offer you a flavorful and gastronomic experience. No detail is left to chance and the professionalism of each member allows for a very high-quality service every time.
In the kitchen, the Chef is supported by Léa Merkel, second in command. After 2 years spent in the kitchens of Le Crocodile in Strasbourg, Léa joined Le Relais de la Poste where she climbed the ranks and became Thomas Koebel’s right-hand woman. This duo is committed to offering creative and delicious dishes. Exchange and sharing are at the heart of their collaboration to surprise your taste buds and offer you a gastronomic interlude during your meal.
In the dining room, Etienne Eyer and his team accompany you throughout your meal and guide you through the 700 references on our wine list. This fine epicurean and great connoisseur of world wines takes you on a journey through the greatest wine estates, but also leads you to discover discreet gems produced by small winemakers. He provides you with expert advice to ensure that your wine perfectly reveals the flavors of your dish.
