Discover refined cuisine at the Ed.Em restaurant in Chassagne-Montrachet, Côte d’Or, in the heart of Burgundy, between Beaune, Autun, and Chalon-sur-Saône. A delightful gourmet stop on your journey along the Burgundy Grand Crus route. In fact, the restaurant came to life about a decade ago thanks to the collaboration of passionate winemakers. Bernard Morey (Domaine Bernard Morey), Michel Colin and Bernadette Colin-Deléger (Domaine Colin-Deléger), Marc Colin (Domaine Marc Colin et Fils), and Bernard Mollard (Domaine Marc Morey) created and envisioned this place and continue to contribute to its development.
Located on the first floor of a charming house, the restaurant run by Emilie Rey and Edouard Mignot reveals a cozy dining room and a friendly atmosphere to share a gastronomic moment that will delight all palates. You will savor contemporary, refined, and accomplished cuisine crafted by Edouard Mignot, along with the indulgent and inventive desserts by his partner Emilie.

Graduating from the Paris Hotel School in 2000, Edouard Mignot continued his training with the Compagnons du Devoir et du Tour de France and alongside some of the greatest chefs. He began his career at the Ministry of Foreign Affairs, at the Grand Hotel Intercontinental in Paris, before joining the team of Philippe Rochat, a three-star chef, as demi-chef de partie. Then, in 2005, he joined Régis Marcon’s restaurant, Bocuse d’Or – 3 Michelin stars in Saint-Bonnet-le-Froid, where he progressed from demi-chef de partie to sous chef in three years. The cook then joined Chef Eric Pras to assist him at the renowned three-star Maison Lameloise in Chagny.
In 2011, Edouard Mignot won the second edition of Toqueshow, a competition showcasing young talents organized by Brake and Les Toques Blanches Lyonnaises. Before realizing his dream at the age of 31: opening his own establishment, Ed.Em, with his wife Emilie, in July 2013.

After completing a BTS in culinary arts and table service, supplemented by a year in restaurant desserts, Emilie Rey honed her skills through several internships, then joined the Auberge de l’île in Lyon as a pastry chef. She then moved to Régis Marcon’s restaurant, Bocuse d’Or – 3 Michelin stars in Saint-Bonnet-le-Froid, where she stayed for four years. She continued her career as head pastry chef at the three-star Maison Lameloise in Chagny, under Chef Eric Pras. After spending several years in the same establishments, the Mignot couple forms a close-knit team with the same vision of cuisine and teamwork, blending rigor, high standards, and love for ingredients.
