Brasserie du Vallon, founded by Quentin Mangel in 2016 in Steinbach, is now located in Bollwiller, in the heart of the Haut-Rhin region of Alsace. Quentin brews a modest 120 hectolitres a year on his own, concentrating on innovative, environmentally-friendly brewing methods.

The brewery also offers seasonal beers and beers infused with local herbs, as well as sour fruit beers and sparkling meads or barrique beers/hydromels. Recipes are renewed according to season and inspiration, ensuring constant diversity and adaptation to locally available ingredients.

Quentin also shares his expertise by offering consulting, training and engineering services to help other brewers set up and develop their own brewing projects. Since 2018, he has helped establish several brewpubs and microbreweries in the region.

Brasserie du Vallon stands out for its brewing method, still little used in France, and particularly in Alsace: raw beers. These beers are brewed in the normal way, but at the next stage, hopping, they never exceed 80°C: this avoids the long cooking/boiling stage typical of modern beers.

This less energy-intensive technique produces smoother, less bitter beers while preserving rich, complex aromas. The beers are then fermented with a rustic yeast called kveik, which makes it possible to dispense with cold rooms or heating systems in all seasons, thus promoting an ecological approach.

(as a bonus, for ecological coherence: ingredients as local as possible, preference for ORGANIC ingredients, no exports outside the region, more and more logistics by bicycle, re-use of glass bottles, reuse of spent grains as animal feed in the next village…)
