Bio L’Acoustic, located in Sélestat, is the fruit of André Gisselmann’s vision and passion, inspired by the maxim: “We don’t inherit the earth from our parents, we borrow it from our children.” This philosophy, rooted in respect for nature and the environment, has guided every aspect of the establishment since it opened in 2007. Bio L’Acoustic quickly became a resounding success thanks to its innovative concept, combining 100% organic and vegetarian cuisine.

From the outset, L’Acoustic has stood out for its avant-garde approach, aimed at proving that it’s possible to enjoy delicious meals without resorting to meat. André Gisselmann and his team have reinvented the classics of French cuisine in vegetarian versions, offering dishes such as Bourguignon, Blanquette and Bouchées à la reine, all prepared with seitan instead of traditional meat. This culinary creativity attracts a varied clientele, curious to discover new flavors while adopting a more sustainable diet.
