Bernard, a former butcher, is the orchestrator of this place where tradition and quality are elevated to the rank of art. He makes a point of using local meats, demonstrating his deep respect for regional know-how. Beef from Orbey, pigs from Orbey and Fréland, and poultry from Ergersheim are the jewels of his cuisine. Each piece of meat is carefully selected, then prepared with passion and expertise. But the work doesn’t stop there; Bernard also sees to the maturing of the meats, giving each bite incomparable tenderness and rich, nuanced flavors.
