Chief of the Gaulois in Bartenheim

The young chef of the restaurant Le Gaulois in Bartenheim – a member of the Collège Culinaire de France and the Fédération des Chefs d’Alsace – Jérôme Paquin has transformed the family brasserie into a gastronomic restaurant. He has a diploma in car mechanics, and quickly moves behind the stove as a self-taught person. An award such as the Michelin star would be a promising consecration of his career as a self-made man. To do this, the Maître Restaurateur devotes his energy to the development of a cuisine that respects the products, the consumer and the environment.

 

A GOOD LOCAL DISH ?

Keep it simple and efficient: a good tarte flambée on the go or with friends!

THE BEST LAMMELE ?

That I don’t know… actually. I find it too dry!

A BUSINESS LUNCH?

Why not in my restaurant?!

A SPRING SPECIALITY?

Asparagus represents the beginning of spring and the arrival of this beautiful season. Moreover, I am next to Village Neuf where their reputation is well established!

YOUR FAVORITE WINEMAKER OR GRAPE VARIETY?

A good Alsatian pinot noir. Or if we leave Alsace, a wine from Alain Jaume, Grand Veneur estate.

A STORE OR A MARKET TO EAT LOCAL?

A good store with nice products, like the one of my friend: le Garde-Manger de Petit Jean, in Colmar.

AN ATMOSPHERE TO DISCOVER?

The Villa René Lalique is a sublime place with a wine cellar to fall!

FAST-FOOD OR CATERING, A TAKE-OUT MENU?

Le Petit Marcel in Mulhouse offers good snacks made from fresh and quality products.

A DINNER FOR TWO OR WITH FRIENDS?

I like to dine at my friend’s place, Chatchai Klanklong at L’Orchidée, in Altkirch. Its gastronomic Thai cuisine is Michelin starred!

A TASTE OF CHILDHOOD?

The coquillettes-jambon, of course! (In my restaurant, I offer a version of this dish called “risotto enhanced by a free-range egg cooked at “65°C” with a roasted onion and rind emulsion and truffle shavings”)

YOUR BEST GOURMET EXPERIENCE?

During a trip to Lisbon, I discovered the Time Out Market. It’s a huge hall that gathers many chefs with very different cooking styles, from high gastronomy to “street food”.

A DISH YOU LIKE TO COOK?

The Hare à la Royale is a complex and time-consuming dish, but so good! We can’t wait to share this historic recipe.

A PLACE TO RELAX ON WEEKENDS?

The hotel-restaurant La Garenne in Saverne is a very cosy place, conducive to relaxation, with an authentic and natural cachet.

A TERRACE IN THE SUN?

No need to go far! At my neighbor and friend Laurent Arbeit, at the Auberge Saint-Laurent, in Sierentz, for its magnificent garden and its terrace under the trees.
