Fabien Mengus began his career at François Golla’s Bœuf Rouge in Niederschaeffolsheim.
After graduating, he quickly moved to Ascona, Switzerland, where he worked at the famous Castelo Del Sol Relais & Châteaux.
A few years later, in 2001, he returned to his homeland and joined Chef François Paul’s team at Le Cygne de Gundershoffen, as Chef de Partie Poisson.
On his arrival, the restaurant already boasted 1 star in the Michelin Guide, and he and his team set out to conquer the second star, which was to shine in 2005.
Fabien’s talent and strong personality astonished Monsieur Paul, who saw tremendous potential in him.
In 2008, the Mengus family decided to unite their destiny with that of Le Cygne by signing a 3-year sales agreement.
The purchase sealed in 2011, the Chef, surrounded by a brigade he already knew well, confirmed the second star the following season, in March 2012.
As the years went by, the Chef pursued his quest for excellence and, with his wife, developed the outlines of a project as audacious as it was ambitious.
In April 2016, after several months of negotiations, Fabien and Laure Mengus finalized the acquisition of the prestigious L’Arnsbourg restaurant.
For this native of the region, expanding his territory of expression to that of Lorraine, and drawing inspiration from both Eastern and Northern Europe, is a source of infinite creativity.
For almost 4 months, the Chef tamed, sketched and fine-tuned a menu as sensory as it was accurate for this once three-starred restaurant.
At the same time, he finalized a long-standing project: to compose a refined, gourmet and accessible experience, transforming Le Cygne into an elegant and uncomplicated bistronomic table.
