In this completely redesigned restaurant, unveiled in April 2018, nature seems to have reclaimed its rights. A century-old Alsatian beam overlooks the dining room, here and there wood from the surrounding forests embraces the walls, and each piece of furniture has been handcrafted by an admirable artisan.
A true ode to nature, the enchanting decor and culinary style of the Chef and his second-in-command, Mathieu Silvestre, harmonize with precision and accuracy, mirroring the biotope so dear to Olivier Nasti. Through a new ‘expression’ menu, Olivier Nasti presents an even more personal carte. Working with products in their entirety, pushing his reflection on textures and cooking methods, and paying particular attention to sauces and decoctions, Olivier Nasti invites guests to discover the perfect balance that takes us on a journey through a contemporary and flavorful Alsace.
Drawing inspiration and desires from the rich palette of surrounding terroirs, Olivier Nasti collaborates with the best local producers to make each creation a direct emanation of the soul of this Alsatian land. Expertise and sharing are the guiding principles of Olivier Nasti’s gastronomy. The Chef trained with prestigious establishments and chefs whose values have marked his own culinary identity with the seal of excellence. Thus, Olivier Nasti nurtured his passion for cooking during years of apprenticeship at Château Servin in Belfort, with Olivier Roellinger in Cancale, and with the Haeberlin family at the Auberge de L’Ill, a famous Alsatian starred restaurant.
Discipline, rigor and high standards, product research and enhancement, mastery and techniques: all these qualities, fruits of long labor, led him to the Meilleurs Ouvriers de France competition in 2007. He then obtained the famous blue-white-red collar, a distinction that fully expresses his desire to always go further, to always do better. Expertise and sharing are the guiding principles of Olivier Nasti’s gastronomy.
Today, at the helm of Le Chambard’s kitchens and notably its 2-star Michelin gastronomic restaurant, Olivier Nasti continues to pass on his knowledge, whether through associations, training young apprentices, serving as a judge in competitions, or through books where he shares his recipes and secrets.
Olivier Nasti was ranked among the top 100 best chefs in the world in November 2016 by Le Chef magazine. In September 2017, the gastronomic restaurant in Alsace joined the association of Les Grandes Tables du Monde. In 2021, La Table d’Olivier Nasti was ranked 10th in the world for Best Table by La Liste.
