For this Japan and design enthusiast who started his career in Paris, deploying his roots in Sens has always been obvious. Spotlight on a chef anchored in Burgundy, but with a wandering spirit.

After 25 years spent in the city center of Sens, in Burgundy, Chef Patrick Gauthier chose in 2017 to move his restaurant to the banks of the Yonne, on an island. Before that, ten years of missed opportunities had put an end to all projects of changing the location of the starred establishment. His love at first sight for the building, and especially for its environment and breathtaking view, was decisive in the change. Like a reminiscence of the Tour d’Argent, where the chef worked at the beginning of his career, durably marked by its exceptional panorama.

Over the past twenty years, Chef Patrick Gauthier has traveled extensively. Two destinations particularly have his favor: Japan, where he has been 38 times, and Scandinavia. Their common point? A very strong sense of aesthetics. Without ever falling into literal adaptation, Patrick Gauthier has freely drawn inspiration from certain codes, between attention to detail, play of materials and sobriety, to imagine his new space.
