The Étang du Moulin welcomes you either to the Michelin-starred Gastronomic Restaurant, which has held 1* for 20 years, or to the Traditional Restaurant, the Bistrot.

In the Kitchen, Chef Jacques Barnachon and his White Brigade, and in the Dining Room, Sandrine Boissenin, his sister with her Black Brigade, are there to help you discover and appreciate their gastronomic universe, conviviality, and exceptional venues.

The establishment is located in Bonnétage in the Doubs (25), in the heart of nature in a private 45-hectare park near Switzerland in the Watchmaking Country between Pontarlier, Montbéliard, Besançon and Neuchâtel

He is a figure, a vision of the restaurant industry and the world around it: Jacques Barnachon did not want to be a cook, but allowed himself to be enchanted by the magic. For more than thirty years, he has been running L’Étang du Moulin with consistency and high standards, a bastion of gastronomy in Bonnétage in the Doubs, rewarded with seventeen consecutive Michelin stars.

This adventure is part of a duration that is far from static: culinary competitions, internships and collaborations from all horizons, foie gras work until winning the Masse trophy, Jacques Barnachon has made L’Étang du Moulin an essential stop for ‘haute cuisine’. Passionate about Asia, he accompanies the development of La Saison in Hong Kong, cooks in Madagascar, becomes secretary general of the Euro Toques association created by Paul Bocuse, and tirelessly campaigns for quality food products of origin.

His dishes of remarkable inventiveness never forget the terroir that supports them nor the season that welcomes them. In a search for harmony that treats each dish like a masterpiece, Jacques Barnachon willingly associates river and sea fish, meats and game, with vegetables from his garden. Artist and ambassador of the taste of Franche-Comté, he follows the world in a constant and gourmet work of coherence and inventiveness.
