“If I were a cheese, I would be… Comté!” This is how Joël Césari introduces himself, a true spokesperson for the rich flavors of his region. Driven by a militant ecological fiber, he puts his talent and quest for perfection at the service of sustainable cuisine, rigorously aligned with the seasons and demanding in the choice of ingredients.
It was then that he answered the call of the Templars, taking over at 25 years old the restaurant located in a 13th-century commandery in the heart of Dole. Fifteen years pass, the desire for nature grows stronger, and Joël Césari decides to buy the La Chaumière inn with his wife Nathalie. It is there, at the gates of the former capital of Franche-Comté, that the Michelin guide rewards his creativity by awarding him his first star.
An artist of taste, concerned with the preservation of ecosystems and living resources, Joël Césari makes each plate a culinary moment that is as exquisite as it is sensitive. Inviting his guests on a gourmet journey with accents of the Franche-Comté terroir, he strives to sublimate the product into creative, light, and colorful compositions.
