After starting out as Chef de Partie with Alain Ducasse at the Hôtel de Paris in Monte Carlo, Philippe Augé continued to climb the ladder, earning his star at the Relais & Châteaux Royal Champagne in 2001. In 2008, he took over the reins of the Hostellerie de Levernois kitchen and continues to seduce the palates of gourmets. Particularly attentive to quality, the Chef favors seasonal produce, sourced from local producers, and even grown directly by Baptiste, our market gardener.
