Created in 1978 by Simone and Jean-Paul, Esther and Thomas succeeded them in 2011 and decided to breathe new life into the Auberge by creating a modern, contemporary space while retaining the spirit that made the restaurant famous, offering "Yesterday's cuisine with today's taste".
