Excellence: this is the guiding thread of Romuald Fassenet’s career. From the kitchens of Matignon to those of La Tour d’Argent, passing through great establishments in the United States and Germany, Romuald Fassenet has continuously perfected his art alongside great signatures of gastronomy.

His uncompromising standards, professional curiosity, and wild passion for his craft were consolidated by Nadine and Jean-Paul Jeunet, a two-Michelin-starred chef in Arbois, with whom he stayed for several years.

In 2002, Romuald settled at Le Bec Fin in Dole with his wife Catherine and their two-month-old daughter Valentine.

From 2004, his work was recognized with the prestigious title of Meilleur Ouvrier de France. And as good things come in pairs, this professional recognition was accompanied by the arrival of little Lorette in the family.

Since 2006, the Michelin Guide – a world reference in gastronomy – has recognized the Chef’s talents by awarding him a first star for the gourmet restaurant in Jura at Dole.

2007 marked a new professional challenge for Catherine, Romuald, and their two daughters. They bought Château Mont Joly in Sampans and transformed it, modernized it, and gave it an endearing character by infusing it, as a family, with all its soul.

Now an accomplished and recognized Chef, Romuald Fassenet continues his quest for perfection. He cultivates his culinary inspiration daily and brilliantly transmits his know-how to others, for example, through coaching the Japanese team at the Bocuse d’Or since 2009. His coaching has been a great success as the team has won a prize at each competition. He is now turning to a new challenge by becoming the coach of the Australian team.

Since winter 2015, Romuald Fassenet has been directing the creation of the menu for the gourmet restaurant at the 5-star hotel Le Pashmina in Val Thorens.
