Laurent Sanchez didn’t get there by chance. It was the smell of bread, childhood memories and a series of professional encounters that inspired Laurent Sanchez to pursue this profession.
He worked for some fifteen years with some of the great names in French gastronomy, but also traveled the world, rubbing shoulders with passionate Compagnon du devoir bakers, to build up a solid experience. Laurent Sanchez served his naval apprenticeship on the BAP Jules Verne, based in the Indian Ocean, before taking his bakery CAP at the Ecole Française de Boulangerie in Aurillac under Messrs. Patrick Bourgade and Christian Vabret MOF baker.
He has taken part in a number of advanced training courses at the Institut National de la Boulangerie and various courses with Alsatian bakers, and has been a member of the Prosper Montagne club since 2013. He has taken part in many national and regional competitions, and was voted Coup de Coeur Artisan by Gault et Millau among the 100 best bakeries in France in 2015.
It was with Olivier Nasti (MOF 2007) that the idea of becoming the manager and head baker of the Côté Four bakery in Colmar for 5 years was born.
