Jérôme Jaegle's Restaurant
Located in Kaysersberg, one of the most beautiful villages in France on the wine route, Alchémille, created by Jérôme and Marie Laure Jaegle, is a simple place. From the moment you arrive, the tone is set; the entrance is through a small landscaped garden with herbs and other wild plants. Once through the door, a simple and uncluttered space welcomes guests, a place of intentional minimalism. Everything is simple and peaceful, with the decor fading into the background. The journey along the ‘grassy paths’ can begin.
Each dish must be a story that tells of its terroir. Every ingredient is tested and experimented with to find the right alliance in its proper texture and taste representation. Thus, Jérôme and his team test each herb or ingredient, respecting natural transformation traditions. Alchémille’s ‘laboratory’ is the stage for various preparations: fermentation, infusion, aging, or natural. Alchémille aims to respect seasons and products in their integrity and proper maturity, expressing its cuisine in two key periods. A spring/summer season made of fresh vegetables and herbs from foraging and gardens, and a so-called ‘preservation cuisine’ season in autumn/winter. From spring to late summer, each surplus product is treated in unexpected combinations, infusions, fermentations, or maturation processes.

Born in Kaysersberg, Jérôme Jaegle has worked with many great chefs. A competitor at heart, he has participated in several national and international culinary competitions such as the Bocuse d’Or, where he represented France in 2011.
It was in 2015 that he decided to return to his homeland to open the restaurant Alchémille with his wife Marie Laure Jaegle, which was awarded a Michelin star in 2017. The green star, a sustainability award, arrived in 2020 to crown their approach.
Because Alsace is his native land, nature his guiding principle, cooking his passion, and the pleasure of his guests his quest, Jérôme strives daily to enchant his Alsatian nature. Jérôme Jaegle, enchanter of nature.
With his land deeply rooted in his body and heart, Jérôme cultivates a symbiotic relationship with it. He feels it, explores it, contemplates it, studies it, and cultivates it with respect in his small mountain-side gardens. Simple, rustic, human-scale gardens where nature reigns supreme, gardens in permaculture. Three gardens to ‘feed his restaurant’, as he likes to say.
‘Feed his restaurant’ is his motto, taking only what is necessary. In his seemingly wild gardens, Jérôme and his teams pick just the right amount of vegetables, herbs, and flowers at their peak ripeness each day for that day’s service.
