Three generations of gourmet heritage

La Vignette in Châtenois is an institution, a family heritage handed down through three generations, steeped in culinary traditions and a passion for gastronomy. Over the past 25 years, Bruno Feldner-Biechel has transformed his parents’ former brasserie into a veritable temple of cuisine, where every dish is a hymn to gourmet pleasure.

La Vignette’s setting reflects its history: warm and welcoming, with a cosy atmosphere that invites sharing and conviviality. Under the leadership of chef Michel Risser, La Vignette’s cuisine is both traditional and eclectic, a skilful blend of traditional know-how and contemporary creativity.

The menu, which evolves with the seasons, new arrivals and the chef’s inspiration, is an ode to the diversity and quality of regional produce. Revisited classics such as Black Pudding Parmentier or Veal Fondant sit alongside more daring dishes like Sturgeon Fillet or Matured Beef, offering a culinary experience rich in flavor and discovery.

But what really makes La Vignette’s reputation is the chef’s passion and talent for sublimating the simplest as well as the most noble products. It’s an art that expresses itself through the valorization of tripe and offal, often neglected but nevertheless so rich in flavor and texture.
