Protection and promotion of artisanal charcuterie, apprentice training
Our association Académie Gourmande des Chaircuitiers brings together 20 artisan butchers, charcutiers, and caterers from Meurthe Moselle and Vosges.
The three objectives of the Académie Gourmande
- The promotion of high-end, innovative artisanal butchery and delicatessen products made by its members.
- Training members in new business techniques, hygiene and nutrition.
- Passing on craft skills to young students in butchery, charcuterie and catering.
- We also take part in numerous culinary events such as competitions, fairs and other regional gastronomic festivals.
And let’s not forget our traditional E.X.C.U.S.E. the Chaircuitiers’ ephemeral specialty, imagined and concocted by the Academicians and brought to you every year from December 6 to January 6.
In creating the Confrérie des Ambassadeurs des Artisans Chaircuitiers, we wanted to bring together all lovers of authentic, artisanal charcuterie, made and sold by true professionals who love their craft. Our oath: Gourmets, food lovers, gastronomes, connoisseurs, and enthusiasts of authentic fine charcuterie, let us rally to the cross of Saint Antoine and commit to defending this jewel of French gastronomy, to proudly uphold its colors by declaring:
On the Tau cross, emblem of Saint Anthony, patron saint of charcutiers, I pledge to defend this noble guild, its traditions and its bright future.
