Chef at Le Gaulois restaurant in Bartenheim
The young chef of the restaurant Le Gaulois in Bartenheim – a member of the Collège Culinaire de France and the Fédération des Chefs d’Alsace – Jérôme Paquin has transformed the family brasserie into a gastronomic restaurant. He has a diploma in car mechanics, and quickly moves behind the stove as a self-taught person. An award such as a Michelin star would be a promising consecration of his career as a “self-made man”. To do this, the Maître Restaurateur devotes his energy to the development of a cuisine that respects the products, the consumer and the environment.
