Tristan Weinling en Camille Besson zijn uit de stad verhuisd, maar zij en hun team blijven veel zorg besteden aan hun klanten en de producten die ze gebruiken. Naast hun lokale producenten hebben ze ook een kleine tuin waar ze kruiden en aromatische bloemen kweken en hun voedselafval composteren.\n\u00c0 la carte, een uniek 7-stappenmenu dat bij het proeven wordt uitgelegd. Dit curiositeitenprogramma (aangepast aan di\u00ebten en allergie\u00ebn) belicht Tristan's talenten in de keuken. Hij komt oorspronkelijk van La R\u00e9union en aarzelt nooit om zijn koffers te vullen met vertrouwelijke producten van zijn geboorte-eiland om ze in zijn gerechten te verwerken.
