Heureusement, une nouvelle g\u00e9n\u00e9ration, sans doute moins dans le prestige et davantage dans la v\u00e9rit\u00e9 du produit et de la saison, reconquiert petit \u00e0 petit ces territoires.\r\n\r\nThomas Collomb est de ceux-l\u00e0. Tr\u00e8s attach\u00e9 \u00e0 sa r\u00e9gion, il a, en une vingtaine d\u2019ann\u00e9es, imprim\u00e9 sa marque sur une cuisine enracin\u00e9e et pourtant sans dorures. Nous l\u2019avons connu \u00e0 ses d\u00e9buts \u00e0 la Cabotte de Nuits Saint-Georges avant de le retrouver \u00e0 la Maison des Cariatides qui, quelques ann\u00e9es apr\u00e8s David Zuddas, donnait \u00e0 Dijon un nouvel \u00e9lan. De cet \u00e9lan allait na\u00eetre un style, bourguignon sans \u0153ill\u00e8res ni archa\u00efsme, mais toujours fier.
