New chef, faithful to the spirit of the place

The new chef Paul Fabuel proposes a creative gastronomic cuisine revisiting the classics of French and Alsatian cuisine.

Located in the heart of the Petite Venise district in Colmar, the charming hotel Le Maréchal is nestled in a real historical monument dating from 1565. The Bomo family has been at the helm of the house for 50 years, and the hospitality, welcome and friendliness have been revitalized by major renovation work.

In the restaurant, the new chef Paul Fabuel offers a creative gastronomic cuisine revisiting the classics of French and Alsatian cuisine. A signature dish: “Duck foie gras with lemon, Mauricette”.
