In the kitchens of Marc Haeberlin at the Auberge de l'Ill, in Illhaeusern.

With a centuries-old family history, the Auberge de l’Ill was built on traditional and careful values. Values that can be found in the plate, in the service and in the decoration of the premises.

Marc Haeberlin, his family and his collaborators open the doors of a restaurant that needs no introduction as its reputation echoes in the Alsace region, well beyond the small village of Illhaeusern.

The restaurant is located very close to Colmar and is easily accessible from Strasbourg by the A35 motorway.

For those who prefer to consume without worrying about the return, the restaurant has a 5-star hotel and adjoining Spa: the Hôtel des Berges and the Spa des Saules is an ideal place to recharge your batteries.

A starred restaurant proud of its terroir

Because the Auberge de l’Ill has a particularly flourishing history, Marc Haeberlin and his team offer elaborate cuisine, rewarded with 2 Michelin stars held since 1967!

The goose foie gras terrine, the “Auberge de l’Ill” soufflé salmon, or even the “Paul Haeberlin” frog mousseline, have entered into the starry legend of the Haeberlin family. These dishes reflect the desire for a gastronomy that draws generously from its terroir.

A refined decoration that illustrates excellence

The dining rooms of the Auberge de l’Ill, up to the terrace at the water’s edge, are an authentic stroll through Alsatian soil. Truly inspired by the banks of the Ill and the landscapes of the Ried, the decoration is refined and as distinguished as the cuisine.

Velvet, canvas, flannel, Hermès print make up the dreamlike landscape of the dining room. In the veranda, a Murano crystal screen plays with a setting completely open to the garden and the Ill. The Haeberlin family was keen to offer a place in harmony with its ancestral and exceptional location on the banks of the Ill.
